Sheero / Sheera

Sheero or sheera is a simple semolina (rawa) based breakfast or evening tea-time snack made in many parts of India. There are sweet and savoury versions of it, and many different names that reflect the part of India you're from. This is how I make the sweet version from Goa.

Ingredients:
1 cup semolina (rawa)
1 - 1 and 1/2 cup milk
1/2 - 3/4 cup sugar (as per taste)
1/2 cup ghee (clarified butter)
2 cups water (use 1 and 1/2 cup water if using more milk)
1/4 - 1/2 teaspoon crushed cardamom (as per taste)
1/3 cup raisins (or, raisins and chopped cashew nuts)
pinch of salt

Directions:
1. Prep your ingredients before you begin to save time while cooking.


2. Heat a pan and add ghee to it. Bring it up to temp., but not smoking hot.


3. Add the semolina to the pan, and roast it on low heat. Take your time with this process and don't let the semolina burn.


4. Once the semolina changes colour to a light brown, we're ready to proceed to the next step.


5. Add the milk and sugar to the pan. Mix it in.


6. Add the raisins and crushed cardamom. Mix them in as well.


7. Add the remaining water and pinch of salt. Make sure you stir the mix well and dissolve any clumps that may form.


8. Cover and cook the mix for 5 - 10 minutes on low - medium heat.


9. Your sheero is done once it firms up and holds it's shape when mixed. Make sure that it doesn't stick to the bottom of the pan. Turn off the heat and let it cool for a bit. It will firm up even more.


10. I love to eat sheero in a bowl with a steaming hot cup of Rose Tea from Goa, but it can also be emptied out into a tray or plate and flattened before being cut into either square or diamond shapes. It's delicious either way!
