Homestyle Aloo Gobi Matar

I've been making this simple recipe for my daughter for years now, and she still enjoys it every time I make it. I've shared it with a few of my friends before and figured it was high time that I gave it a permanent spot on my blog.

Ingredients:
1 cauliflower (medium size)
2 onions (chopped)
3 medium potatoes (cut into small cubes)
1 cup peas (fresh or frozen)
1 cup tomatoes (chopped/crushed)
1 teaspoon ginger/garlic paste (ginger/garlic paste recipe)
1 teaspoon cumin seeds
2 teaspoon coriander powder
1/2 teaspoon turmeric powder
6 curry leaves
salt to taste


Directions:
1. Get your kids involved in the cooking process. A simple task such as breaking apart the cauliflower into florets and measuring out the spices is a good way to keep them occupied.


2. Wash and leave the florets to soak in water.


3. Prep the rest of your ingredients.


4. Heat a couple tablespoons of oil in a large or deep pot, and once hot add the cumin and curry leaves to it.


5. Add the chopped onion next and saute until the onion starts to brown.


6. Add the ginger/garlic paste, coriander powder and turmeric powder next and continue to fry for a couple minutes.


7. Add the chopped/crushed tomatoes next. Note: You may have to add a little water to the pot to prevent the mix from sticking to the bottom of the pot.


8. The cauliflower and potatoes go in next.


9. Mix it well so that the florets and potatoes are covered in masala. Cover and cook on medium heat for 15 - 20 minutes.


10. Add the peas and mix well once again.


11. Cover and cook for a further 5 or so minutes until the potatoes and cauliflower florets are cooked. Add salt to taste a minute or two before turning off the heat.


12. Serve as an accompaniment to your meal, or have it with bread or chapatis.
